It is about La Pastaria Shipka, as they named it. Unfortunately, only it remained in Sofia, the other restaurants from the chain have closed, but we are glad to have the opportunity to visit them again after the closure for Covid-19.

 See ….

…. Rustic Italian interior, which we know is typical of them, with small tablecloths of white and red squares;

…. The tables outside are also attractive;

…. Beautifully arranged dishes on the plates, aesthetics, both everywhere in Italy and here is present in everything.

Feel ….

…. Intelligent, pleasant service – the girl who made sure we had everything and were feeling as comfortable as possible was exceptional;

The biggest advantage of the restaurant is the service, which immediately impresses. Of course, the food is very tasty, but such good attention to the needs and expectations of the customer is almost non-existent.

…. Staff masks are tight on the face, including the nose, although outside it is 30 degrees;

…. We were difficult customers, we stayed there late, the young people were already clearing the tables, but they told us, “stay calm, everything is fine, don’t worry” and they sounded sincere, although it was obvious that they were tired and eager to go home and  rest.

Hear ….

…. Italian canzonettas, street noise, but not tense, because Asen Zlatarov Street is small and quiet in general.

Smell ….

…. Basil from the pesto in the Burrata salad from the seasonal menu the aroma of the Mediterranean;

…. Ginger, garlic and red pepper spicy pleasant tempting aromas in shrimps La Pastaria, prepared with butter in a sweet pan with a handle;

…. The wine by glass was great – complex aroma, balanced acids – I tried a rose with San Giovese and Syrah varieties.

Taste ….

…. The whole seasonal menu is impressive…

                             … Octopus with delicious dip lyutenitsa and cheese around it,

                             … Veal liver, breaded in thin slices and with a crispy crust,

                             … Crispy breaded squid,

                             … Shrimp – both in a pan with butter and aioli breaded with sauce.

.… Desserts are traditionally good…

                             … The well-known to customers of La Pastaria chocolate mousse with flakes of salt …

                             … Tiramisu of course and many other options.

Aioli sauce comes from Catalan cuisine, but is also widely used in Provence and France in general. It is made like mayonnaise with olive oil, but unlike it, no egg are added, and the basis of its taste and aroma is garlic. In some modern recipes, an egg is added, but then we move away from the ethereal classic aioli and go for a denser taste and aroma.

Unfortunately, the aioli here was a little thicker than what I’m used to being offered. My expectations are for a more ethereal texture, especially when combined with a breaded product. Otherwise it tastes too oily and thick.

… Finally, they will treat you with homemade limonchello.

We had a great time at La Pastaria and we will go again without abusing their hospitality this time and staying late.
