Villa Rossa was indeed once a residence of the former socialist elite. Yet another beautiful location in nature, once exclusive only for those who hardly deserved such privilege.
Today, it is a boutique hotel, accessible to anyone willing to pay for a not exactly inexpensive stay with breakfast – but every euro spent is well worth it..
This is not just another spa hotel claiming to have a curated wine list, like many we have encountered lately, with high prices and ambitions for quality they simply cannot deliver.
Villa Rossa is a truly unique place not only because of the stunning natural surroundings and the healing mineral water rich in radon, but also because it has been elevated with refined interior design, excellent service, an interesting wine selection, and outstanding gourmet cuisine.
Italian architects have carefully preserved the best elements of the original building, restoring it with respect for the work of those who built it.

… Excellent service – every staff member makes sure nothing is missing from the guests’ comfort. Right from the entrance, you are welcomed with a glass of genuinely good prosecco not the cheap kind, but something carefully selected. The same prosecco is also offered every morning at breakfast, if you enjoy starting your day that way.
… The spa area is sufficient and pleasant – two outdoor mineral pools at 37°C are available during the day and evening, a small indoor heated mineral pool, a Finnish sauna, steam bath, facial and body massages, and a special radon bath with concentrated mineral water (offered at an additional cost, limited to no more than 20 minutes due to its strong effect).
… If enjoying the hills around the hotel is not enough, take a walk up to the gazebo – about a 15-minute gentle climb, accessible to everyone, rewarded with an even more beautiful view from above. If you want more, head down and follow the path for about 15–20 minutes to the Kyoravoto Dere waterfall – the hotel staff can guide you. It is full of water mainly in winter and spring, and dries up in summer. You can challenge yourself with a steeper climb to its upper part, where the water flows down a rock. If you continue further up the trail, you can extend your walk, and for those seeking a bigger challenge, a 7-hour hike leads to Pashaliytsa hut near Chepelare.
Most importantly: the strength of Villa Rosa is in the feeling of care – the service, mineral water, SPA area and tranquility work together without the place seeming cluttered or noisy.

… The echo of the surrounding hills carries the birds’ songs – you simply do not need any other music.
… Inside the hotel, during dinner and breakfast, the music features relaxed arrangements of well-known hits – perfectly setting the mood for rest and complete relaxation.
The bottom line: if you’re looking for a place of silence and real disconnection, Villa Rossa is a good choice. The sound of nature here is part of the experience, not just a background.

Smell in Villa Rossa …
… No car exhaust fumes around the hotel – all vehicles are parked lower down, and guests are transported to the property by electric shuttle.
… Vaporizing scent diffusers are used throughout the common areas. I did not quite understand the need for this, given that the hotel is new and there are no unpleasant smells. The fragrances were too strong and overwhelming, which turned out to be our biggest issue during the stay. As soon as I asked reception to turn them off at least on our floor, action was taken immediately, the scent gradually faded, and we could breathe comfortably again. This is the only reason half a point was deducted from the rating. It is essential for management to address and reduce these strong scents, as they create an impression of poor taste and lack of balance, which contradicts everything else the hotel stands for.
… Aromatic tea and Illy coffee in the early morning, as complimentary items in the room, along with the characteristic bell pepper note in the complimentary Cabernet Sauvignon from the hotel’s own Daros winery.
The biggest minus: the overly strong scents in the common areas and textiles are at odds with the otherwise measured style of the hotel. The good news is that the staff responded adequately when we shared the problem.

… The food at Villa Rossa is not just breakfast and dinner – it is a true gourmet experience. Chef Stefan Yotov creates masterpieces on every plate, without holding back.
… Breakfast is not a buffet. You choose from a menu whatever you think you can eat and drink. In reality, it is hard to go beyond two options, because everything is exceptionally delicious and filling. The selection ranges from omelets that are anything but ordinary, always with interesting additions such as smoked fish, goat cheese, or parmesan, to various versions of eggs Benedict, sourdough toast with creative toppings, unique pancakes, cinnamon rolls, or simply yogurt with fruit or granola with different add-ons.
… Dinner is à la carte. Every starter and main course is tempting, with unconventional ingredients and combinations, executed at a very high level, using refined techniques such as foams, crumbs, powders, mousses, and reductions. You simply have to try the desserts share them with friends so it does not become too much, but do not skip them, they are worth every calorie. You will burn it off later with nature walks or the complimentary Saturday morning Pilates session offered to guests.
… The wine list deserves special mention. It is clear that there is real care and expertise behind it, something our group of wine enthusiasts truly appreciated. The hotel’s own Villa Daros wines surprised us with interesting varieties, including a Blanc de Noir from Sangiovese, which was particularly intriguing. The Daros Riesling was approved by all of us as one of the more successful attempts by a Bulgarian producer with this variety. The Cabernet Franc was also very enjoyable. The Old World selections on the list were solid, though it could benefit from further expansion, especially with some New World additions.
… The hotel offers tastings of Villa Daros wines. If you are a group, you can book one with the hotel’s sommelier, who also assists guests with wine selection in the restaurant.
… After dinner, you can try the cocktails at the bar, but they were not particularly impressive. I would rather recommend going for classic cocktails or choosing one of the stronger spirits instead.
Bottom line: the food and wine list are one of the main reasons Villa Rosa is worth it. This is a place where breakfast and dinner are not just part of the overnight stay, but an important part of the experience.
A weekend at Villa Rossa is truly enjoyable – relaxing, recharging, rich in gastronomic and wine experiences. You feel well taken care of and completely at ease. I am glad we were able to experience once again that increasingly rare level of service and unquestionable quality throughout the entire stay.
