A very tasty Italian place – Briciole, Sofia

It took me a while to decide to go to the Briciole restaurant. It is more like a trattoria, because the atmosphere is casual and pleasant, leisure urban and stylish. I’m glad that I finally fulfilled this plan, because I really liked the place.
By the way Briciole means crumbs in Italian.
…. The decoration with boxes of paint on the wall, from which multicolored paint seems to flow which correspond to the colorful chairs;
…. Brick walls, wooden tables and chairs – the tables for two are minimalist and intimate, as if the couple is cuddling on them with a bottle of wine and a little cicchetti (chiketi).
Cicchetti is a Venetian dish, small bites that consist of a crunchy focaccia, topped with a stuffing of ham, cheese, vegetables or a mix of these things.
…. Very beautiful plating, as if it is not a trattoria, but a gourmet restaurant!
…. The pizza is oblong, in rectangular pieces, not round, as in most places.
…. Very friendly service, everything you are interested in, you can ask, they will tell you, they will tempt you and they will be honest with you about everything;
…. The chefs are Italian, there is no compromise with the quality of the products or with the way the food is prepared.!
…. It is quite noisy from the traffic on the Ring Road, but you can also capture rhythmic modern music, as well as birds from the nearby grove. The fine dining part is a little quieter, but traffic noise can still be heard a lot.

…. Diabolo pizza smelled great appetizing and was super delicious;
…. Great aromas in the Sicilian wine they offer in a glass from a bottle.
…. Unique pizza – Roman dough, very crunchy, with wonderful products for the garnish;
From the waitress I learned that the Roman dough is higher than the thin one and is made with 80% water and 20% flour mixtures. It ferments all night, inflates perfectly and becomes very airy. It is baked in an oven and in this way it is both raised and crispy. It is really very tasty and impressive. It is also good for a thin waist, because it is made again with as much flour as the thin one.
… Carbonara pasta – the waitress recommended it to me again. What is special about it is that it is made with the classic creamy sauce, which is prepared with part of the water in which the pasta is boiled, and it is vigorously stirred with grated pecorino. Personally, I’m more of a fan of parmigiano, because pecorino has a slight scent of sheep’s cheese, but it’s worth trying in the original way;
… Tiramisu – very tasty;
… Their homemade ice cream – they have both standard and non-standard flavors such as blueberry and lavender.
…. Espresso to which chocolate has been added.
Eh, what a nice place is Briciole! I long to visit it again! They also have a location on Vitosha Street, but there are very few seats inside, and outside are the main seats. They sell there the Sicilian wine, which they import.
