Since Cosmos is one of my favorite places lately, I visit it often. Today I had a new find there, a master piece by Chef Alex Ivanchev. It is a dessert named Cappuccino. It consists of hard base with sugared fruit- in this case melon, then a layer of chocolate cremeux and on top of it a fluffy and thick cappuccino espuma.
Cremeux is a creamy- neither liquid, neither mousse. It is coming from the French cooking school. The espuma is a foam, not too airy but velvety and soft as texture, very tender and tick at the same time, usually made with a siphone.
I had a crush on this wonderful dessert and cannot help sharing it with you instantly. I added a flavorful espresso, 100% Arabica from Ethiopia by Dabov, without sugar, to balance it.
(There was a great pumpkin cream soup with parmigiano in the daily menu. I tried also wine marinated lamb roll but it couldn’t become one of my favorite dishes there.)
Such a jolly rainy afternoon! I would recommend to run for an afternoon coffee and Cappuccino dessert at Cosmos just for fun and delight!
