It’s been a long time since I went to restaurant Cosmos for dinner and we decided, like, on the move, with unanimous support from the whole family, including the children, to go there. We were all extremely happy with our choice.
The 5D Sensograph score of Cosmos restaurant in Sofia has always been the maximum 5 out of 5 hearts. They can always surprise you with something new, different, very tasty, to offer you a remarkable experience for the senses.

…. There is a small booklet called The Astronaut’s Handbook, with curious facts about some of the products that are used in the meals, about Bulgaria and about space.
Restaurant Cosmos has a project called “Atonement.” They aim to search for the places and people who produce traditional, but somehow rare Bulgarian products, to support the efforts of these farmers and to use their unique production in their cuisine.
If you’ve heard of Krokmatch, branza, purple potato, lunar bean, pestil, it is probably from them or from another restaurant Before 10, owned by Valery Neshov, who first embarked on this mission.

…. Very good service, with presentation of the food at serving. It should be exactly like this, since Vladislav Penov’s masterpieces deserve it.
…. The delicate and smooth consistency of the krokmatch. In general, it is made of sheep milk, which is boiled with salt and conserved like this, but here it is also of goat milk;
…. Slightly sweet and fluffy beer foam in the ribs;
…. Fun in the mouth, due to the popping candy in the chocolate dessert, named Black hole– it has both liquid chocolate and chocolate mousse, as well as a tonic sorbet. Adding the theatrical serving with pouring the hot chocolate on it…. Why am I wringing about it, just see the movie or go there and try it!
…. Crispy mushroom chips in the Beef cheeks, in contrast to the tender consistency of the trahana.
Trahana or Tarhana, as it is called in Greece and elsewhere, is traditional for the Balkan peninsula and somewhat forgotten product, which is made from fermented with leaven grain, dried for several days. It has a slightly sour taste and with the spearmint, as they prepare it at Cosmos, it is terribly delicious, especially in combination with the tender Beef cheeks, Jus sauce from them and the seasonal mushrooms chips.
If you wonder what sauce Jus is, that’s the sauce in which the meat was cooked. It is refined and concentrated, without adding flour, as is the case with gravy sauce.

…. Balkan ethno with jazz arrangement. You cannot stay indifferent to the music, because it is very cool, and synchronised with it flashing cubic lamps on the walls of the restaurant and the moving glittering cosmic spheres under the ceiling;
If you haven’t been at Cosmos until now, just go to see this show. I’m sure you’ve never seen an interior like this before;
…. Important detail for the visitors of Sofia, the personnel of Cosmos speaks good English.

Smell ….
…. The bouquet of aromas in the dish Beef cheeks- a little caramel in the sauce Jus, the fresh sprearmint in the Trahana, the forest of mushrooms. Add blueberry and cherry scents from a very nice local red wine Novoselska Gamza, reserve 2017, aged 1 year in barriques of Strandja Oak and you get a perfect experience;
…. As an aperitif I tried another cocktail from the remarkable list of Cosmos. Aurora Borealis.
From the combination of Skinos, Tanqueray gin, lemon and tonic, stood out an exclusive ingredient that made the traditional gin tonic cocktail a real experience. The word is about the fermented cucumber juice. Put some powder of pepper, salt and samardala on the glass, and now we’re talking about a masterpiece. It was served with a blade of thyme, the aroma of which slightly precedes the rest, to wrap them in its garden splendor!

…. I cannot help but mention the pleasant mineral and salty nose of the rosé Diane 2018, by Chateau Pas du Cerf from Cotes De Provence.
Cosmos Restaurant offers an exceptionally good wine and by glass too, which I appreciate very much. Good food should be combined with nice and quality drinks! Each dish with different drink which can be fulfilled only by glass offer.
Taste ….
…. Pork ribs with beer foam;
…. Tetevenska salad with a gentle Krokmatch of goat cheese- the tomatoes are very tasty, the tartare of peppers is slightly sweet and very well balanced by the salty cheese, and the garlic chips on the top make the dish very playful;
…. The traditional for Bulgaria Shopska salad is in unconventional variation- with foam, powder and other such extras;
…. Kids always order homemade lemonade in Cosmos and drink a lot of it. The elderberry variant also delights them;
…. “Attack” with a cocktail, finish with dessert wine- we chose port and Bulgarian dessert wine of Dimyat variety. The same color, but slightly different aroma. My preference is slightly tilted to the Port, however.
I’m sure whatever you choose from Cosmos menu will be a new type of experience, very tasty and memorable. The well-selected wine and brandy list are a must-have supplement.
