…. Interior, already described in my first review – COSMOS- EXTRATERRESTRIAL SYNCHRONICITY BETWEEN CREATIVITY OF INTERIOR AND CUISINE, SOFIA, BULGARIA;
…. Extraordinary presentation of each dish, like a picture plated on white or black plate, whichever serves as a better canvas to emphasize its colors to please the eye of the client with its beauty.
…. The waiters’ desire not only to present well and serve fast the dishes – if they hear you talking about cooking, they will provide vocational insider’s advise;
…. Some of the dishes arriving too fast, staying for long on the table before consummation, getting cold, which damaged my enjoyment to their taste- what a shame!.
…. A thorough explication of each dish – the products in it and their origin, as well as the cooking techniques used;
…. Wonderful ethno- jazz, ethno-soul and other variations of ethno music-you will be surprised.
…. A new smell….of boza in the new dessert by the new pastry Chef Alex (I could not understand the second name).
…. Leaf salad with cucumbers, differing by its cheese powder, yogurt sorbet, pouched quail eggs, seasoned with dressing of fresh garlic.
…. Saganaki shrimps – they have nothing to do with the standard of this dish, only the same ingredients are mixed and prepared in a totally new modern gourmet fashion- the shrimps are fried with wonderful crispy batter and you dip them in a tomato sauce topped with cheese espuma, giving the sense both of crispiness and silkiness;
…. The sausage made of East-Balkan pig is now presented in a new style- with small fairy ring mushrooms, nettles mouse, potatoes and cheese – fantastic!;
…. Unique dessert Banitsa with Boza – Boza is a popular traditional drink in Bulgaria made of fermented millet, while Banitsa is a traditional salty pie with cheese and eggs wrapped in pastry sheets. The malt drink Boza is served in the form of sorbet and the Banitsa is filled with yogurt and cheese espuma. The whole feeling is of crisp, a little sweet, a little salty and a little sour dessert, a good introduction of the new pastry Chef, Alex.
I was once again impressed during my consecutive visit in Cosmos, Sofia. I tried some new meals and some old ones. The new ones were good but cannot say more since they were cold already when I consumed them, because they were brought earlier than I was ready. So in my photos you will see pics of batter- fried morsels of animal brain and white asparagus but I cannot comment details about their taste and smell. The old dishes were presented in a new way and I liked them even more than before.
I learned also, that the old pastry Chef Alex Ivanchev has left and a new one, again Alex by the name is responsible for the sweet tooth of the customers. His new boutique dessert Banitsa with Boza made a great first impression.
I learned as well, that they have another wine list with bottles more expensive than EUR 50 for the true connoisseurs of good wine.
Since I mention for the second time the East-Balkan pig, I want to explain a little what is so special about this breed of swine. This is a breed, which was self-selected, i.e. almost without human interference in the process. These pigs are being pastured in the open like sheep. They eat acorns, roots, just like true gourmands they like truffles, herbs, berries and their protein diet includes only worms. Very healthy and supreme cuisine! Respectively the taste and smell of the meat is unique and for me it is the only that I like without refrain ( I am very fussy and picky about pork).
For your info, I intend to visit Cosmos very, very soon again. Did I tell you that lately this is my favorite place? Well, if not, I am telling you now.
